Ragi Breakfast Pancake

During Navratri, many people keep a 9-day fast. Our recipe for the month is a delicious fluffy sweet breakfast pancake that can be made during Navratri! Why miss out on your favourite pancake just because you’re fasting?

Ingredients

1 cup rajgira/amarath flour, 3 tbsp jaggery, 2 tbsp coconut (desiccated or freshly grated), ½ cup milk, 2 tbsp ghee, ¼th tsp cardamom, I apple peeled & grated, dhopped banana/strawberry/almonds/raisins, Water as required

Method

In a bowl, mix together the apple, coconut, cardamom, ghee & milk.

Mix in the sieved flour & water to form a thick batter.

Heat a non-stick pan, add a little ghee, pour a ladle of batter & spread into small round pancakes.

Cook well on both sides till golden brown.

Serve hot topped with chopped fruits and a dollop of white butter/curd.
