Rushichi Bhaji | Aditi Limaye

Rushichi Bhaji

Rushichi bhaji is a healthy, mixed vegetable curry made with or without spices. It is also mandatory that all these vegetables are grown without the use of bullocks. It is made on Rishi Panchami, which is the 2nd day of Ganpati.

Ingredients

¼ cup coconut, 2 green chillies, ½ cup chopped colocasia leaves and stem (aluchi pane and detha), ½ cup chopped lal math, ½ cup chopped val papdi, ½ cup matar/green peas, ½ cup lal bhopla / pumpkin, ½ cup corn, ½ cup chopped dodka / ridge gourd, ¼ cup cucumber, 1 tbsp ghee, ½ tsp cumin seeds, 2 tbsp tamarind pulp, salt to taste, water as required.

Method

  • Grind the coconut and chilli in a blender.
  • Heat the pressure cooker on medium heat.
  • Add ghee and when hot enough, add cumin seeds. Let them splutter.
  • Add aluchi pane and fry for about a minute.
  • Add val papdi and aluchi detha. Mix well.
  • Add pumpkin, ridge gourd, lal math, corn, cucumber and green peas. Mix well and fry for about 2 minutes.
